The seasons are a driving force in the development of ice cream flavours. Ice cream isn’t only to be savoured in summer (admittedly it’s all the more delicious when the temperatures soar). As seasons change, we find renewed energy in the kitchen with readily available rhubarb, pumpkins, and raspberries, and then along come peaches, sweet corn, dark cherries, late plums and autumn pears. A cookbook like Great Scoops features a cheerful collection of 80 easy, custard-style and vegan ice creams and delectable desserts – all gathered by season so come spring we can whip together a raspberry cheesecake flavor or a limoncello blackberry biscotti while summer introduces the likes of fresh mint chip and honey lavender.
