INGREDIENTS
Nonstick spray or oil, 6 eggs, 2-3 cups chopped greens or other vegetables, 1⁄3 cup grated Parmesan cheese (1 ounce), ½ teaspoon garlic powder, ¼ teaspoon salt, ¼ teaspoon ground black pepper, and a dash of hot sauce.
DIRECTIONS
Preheat oven to 400 degrees F.
Coat 8-inch round pan or muffin tin (mini frittatas) with nonstick spray or oil, covering bottom and sides. A paper towel can be used to coat pan with oil.
In a medium size bowl whisk eggs until whites and yolks are one color.
Add chopped greens and/or other vegetables. Add cheese, garlic powder, salt and pepper. Mix thoroughly.
Pour egg mixture into prepared pan or muffin tins, three-fourths full.
Bake 10-12 minutes or until eggs are set and an inserted knife comes out clean.
Add a dash of hot sauce to your liking.
