My definition of a hero isn't a person who wears shoulder pads, a jock strap or cleats.  My heroes wear brass buttons, fatigues and the American flag on their shoulder. My heroes don't race around a track, they race around the world to defend and aid those in need. They don't throw fast pitches, touch down passes, or free throws.  They don't win academy awards, Grammy awards or Tony Awards. My heroes don't need recognition for their performances.  They do it because they love their country.  They do it for the people they love and for people they will never meet.  They aren't making millions of dollars, although they should.  They make humble salaries to give their families basic needs and wants. It's apple season!  Those words are music to my ears!  I love apple season.  I love apple picking, the scent of apples and everything apple in between. I recently made some apple tarts and hand pies and wanted to share the easy recipes with you. Apple filling recipe: 4 medium apples (I prefer granny smith) 2 tbsp. butter 1 tsp. cinnamon 1/3 cup sugar 1 tbsp. corn starch 4 tbsp. water Start by peeling and coring all of the apples.  Slice or dice apples. (whichever you prefer) In a frying pan melt butter and cinnamon on low/medium heat. Add apples, sugar and 3 tbsp. of water. Cover and cook for 5 minutes or until apples start to soften. In a small bowl, combine 1 tbsp. water  and corn starch. Add to apples and continue to cook the apples until they are soft without turning into mush. Make sure the filling is thickened.
